Cappelletti con Salmone Affumicato e Fagiolini
If I was someone who went camping, and I’m not, I would certainly keep this little recipe in mind. My daughter and I stayed in a little bungalow near Noordwijk aan Zee that my Om Matti has for guests and for the luxury of a garden when the views of the North Sea aren’t cutting it anymore. The bungalow has a small kitchen, which was perfect for breakfast and some lunches, but I needed some glimpse of vacation on my trip, since most of it was spent chasing after my two year old who was suffering horribly at the absence of her father. Dinners were mostly eaten out, but I whipped this up on one of the few nights that we ate at home, I think I really hit the jackpot with this one.
Since I was on vacation and there was no dish washer, I wanted to dirty as few plates as possible. I boiled the beans with the pasta, and when the pasta was cooked to perfection I tossed all of the other ingredients in the pot with the pasta and the beans. One pot, one cutting board, two plates, two forks, one knife, one wooden spoon, minimal clean-up.
Cappelletti con Salmone Affumicato e Fagiolini
- 1 lb Cappelletti
- 1/2 lb green beans
- 1 cup smoked salmon, cut into small pieces
- 3 tbsp chives, minced
- 2 tbsp extra-virgin olive oil
- salt for the pasta water
Fill a large pot with water for the pasta. Bring to a boil over high heat.
Once the water starts to boil for the pasta add a small handful of salt to the water and bring to a rolling boil. Add the beans and cook for 7 minutes. When 7 minutes have past add the pasta and cook with the beans until the Cappelletti are al dente.
When the pasta is perfectly al dente, drain the pasta and the beans. Without shaking all of the water out of the colander pour the pasta and the beans into the pan and over a low flame, toss with the salmon and the chives, drizzling olive oil over the pasta.
Serve hot or at room temperature as a pasta salad.
