Zucchini and Smoked Salmon Spaghetti

November has come and it came in with the cold. I can’t complain too much, we haven’t seen any cold white stuff that everyone in the Northeast is already suffering, but it is cold down here, cold enough to have the heat turned on and the sweaters are out of their summer homes and in my closet.

I am looking forward to seeing what the farmer’s market will bring with this cold weather, hearty greens and colorful pumpkins, but since we live in South Carolina, zucchini is still showing its pretty face this time of year, the lovely delicate little ones, which are my favorite.

Zucchini and Smoked Salmon Spaghetti

  • 3 zucchini, cut into quarters and sliced
  • 2 cloves garlic, peeled and crushed
  • 1/2 cup smoked salmon, cut into small pieces
  • 1/2 pound spaghetti
  • 2 tbsp fresh parsley, minced
  • 3 tbsp extra-virgin olive oil
  • salt for the pasta water

Wash, quarter and thinly slice zucchini. Heat oil in a wide saucepan over medium-high heat and add the whole cloves of garlic. When garlic starts to sizzle add zucchini. Sauté zucchini over high heat for about five minutes or until they start to brown, lower heat to a medium flame. You need to make sure to turn the zucchini frequently so that they don’t burn. Add the salmon to the zucchini when you have added the pasta to the water, you don’t want it to cook for too long, it can become very dry.

In the meantime, fill a large pot with water for the pasta. Bring to a boil over high heat.

Once the water starts to boil for the pasta add a small handful of salt to the water and bring to a rolling boil. Using a tea cup to reserve some of the water to add to the sauce when you toss it with the pasta, in case it gets too dry. Add the pasta and cook until al dente. When the pasta is perfectly al dente, turn up the heat on the sauce and drain the pasta. Without shaking all of the water out of the colander pour the pasta into the pan and toss it with the zucchini and the salmon. Toss with chopped parsley and serve immediately.
