Cold Asparagus Salad with Sesame Seeds
Italicious is three years old today!!!
I’m happy with the way that Italicious has been shaping out, there are improvements that I could make, of course, but so far, so good. I could use a few ads, maybe make a little money off of it. The idea of a cookbook always bounces around in my head, but has been put on the back burner for the moment. I need new inspiration and life seems too chaotic right now to embark on such a voyage. For now I will continue trudging along with my bi-weekly posts, trying new things out in the kitchen and dreaming of travel, gas burners and better fish markets.
Cold Asparagus Salad with Sesame Seeds
from the Joy of Cooking
Whisk together in a small bowl:
- 3 tbsp toasted sesame oil
- 4tsp white wine vinegar
- 4 tsp soy sauce
- 2½ tbsp sugar
Toast in a small skillet until golden brown:
- 4 tsp sesame seeds
Immediately stir into the dressing. Place in a large pot of boiling water:
- 1½ lbs asparagus, peeled and cut diagonally into 2-inch pieces
Cook for no more that 1½ minutes for thin asparagus or 2½ minutes for thicker. Immediately drain and refill the pot with cold running water until all the heat has left the asparagus. Drain again and dry thoroughly. Cover and refrigerate until the salad is cold, about 1 hour. Toss with the dressing. Serve.
