Grilled Lemon-Balsamic Asparagus
I have been neglecting my poor blog, mid-summer laziness is taking over. It hasn’t been for lack of cooking, though I have been slack on photographing everything that I make. It isn’t even because I am so busy, I mean I am childless, without a car and unemployed. Who knows, it is hot, it is South Carolina and I have caught the Southern lull.
Grilled Lemon-Balsamic Asparagus
- 1 lb asparagus
- 1 tbsp lemon zest
- 1 tbsp extra-virgin olive oil
- 1 tsp balsamic vinegar
- salt to taste
Snap the ends off of the asparagus and wash them thoroughly, drying them well when you have finished. Toss the asparagus in the lemon zest, balsamic vinegar and olive oil with a pinch of salt. Let the asparagus marinate for about 20 minutes, tossing every now and again to coat thoroughly.
The grill should be hot when you put on the asparagus, this will also work on a grill pan. Grill for 5 to 10 minutes until the asparagus is well seared, but still crunchy.
Serve immediately as a side dish to grilled fish, meat, or other grilled veggies.
