Honeydew Melon and Green Tomato Salad
I had a friend when I was little who’s father was a professional photographer. There were framed photographs that he had taken lining the stairwell, a number of beautiful pictures of her mother, some of her and her sister, and then there was a picture of one half of a melon. I remember walking by that picture and never knowing what the hell it was, it also always seemed a little dirty to me, even after I realized, years later, that it was a melon and nothing else.
Honeydew Melon and Green Tomato Salad
- 1 teaspoon ground cumin
- 2 tablespoons toasted pine nuts
- juice of 1 lemon
- 2 green tomatoes, chopped
- 1 honeydew melon, cut into 3/4-inch pieces
- 1/4 cup packed basil leaves
Toast cumin in a dry small heavy skillet over medium heat, stirring constantly, until fragrant and a shade darker, about 1 minute. Transfer to a large bowl.
Add pine nuts to skillet and heat, stirring constantly, until toasted.
Whisk together cumin and lemon juice then gently toss with tomatoes, melon, and basil. Sprinkle with pine nuts.
